Description

This cheesy Beef Enchilada Skillet recipe with ground beef is a quick and easy way to enjoy a delicious comfort food the whole family will love for dinner. It’s a healthy enchilada recipe with the convenience of cooking skillet enchiladas in one pot!


Ingredients

1 pound ground beef

1 onion, diced

3 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 (15-ounce) can black beans, drained and rinsed

1 (10-ounce) can red enchilada sauce

1 (10-ounce) can diced tomatoes with green chilies

8 corn tortillas, cut into 1-inch pieces

2 cups shredded Mexican cheese blend

Chopped fresh cilantro and sour cream for garnish, optional


Instructions

  1. In a large skillet over medium-high heat, brown ground beef with onion until meat is no longer pink, about 5-7 minutes. Drain.
  2. Add garlic, chili powder, cumin, paprika, salt, and pepper. Cook for 1 minute until fragrant.
  3. Stir in black beans, red enchilada sauce, and diced tomatoes with green chilies. Bring to a simmer.
  4. Add tortilla pieces, pushing them down into the sauce mixture.
  5. Reduce heat to medium-low, cover, and cook for 10 minutes until tortillas are softened.
  6. Sprinkle cheese over the top, cover, and cook for 5 minutes until cheese is melted.
  7. Serve hot, topped with cilantro and sour cream, if desired. Enjoy!

Notes

How to store, reheat and freeze:

Enchiladas Skillet should be stored in an airtight container in the refrigerator for up to 3 days.

To Reheat: Warm in a skillet over medium heat until heated through, or microwave in 30-second increments.

To Freeze: Freeze in an airtight container for up to 2 months. Thaw in the refrigerator overnight before reheating.
