Sift together flour, baking powder & baking soda.

Beat butter and sugar until light and fluffy. Next add in eggs, one at a time, followed by Ricotta cheese & vanilla extract.

Add flour mixture in three additions and mix just until combined.

Use a small scoop to drop dough onto baking sheet, 2 inches apart.

Bake in 350°F oven for 13 to 15 minutes.  While cooling, make the icing.

Dip cookies in icing, then sprinkle with rainbow sprinkles and enjoy!
