MINI CHRISTMAS FRUITCAKES

Soak fruit and raisins in rum or brandy overnight. 

Cream together brown sugar, butter and egg. 

In a separate bowl, combine flour, baking soda, salt & spices.

Add dry ingredients to butter mixture. 

Stir in walnuts and fruit. 

Use a small cookie scoop to fill mini muffin tins. Top with a candied cherry.

Bake in 300°F oven for 25 to 30 minutes. Brush with warmed apple jelly.

Combine powdered sugar and milk for icing.  Drizzle on top of each fruitcake.
