Heat oil in skillet and add onion, chicken breasts, salt & pepper.
Cook then flip the chicken over and cook an additional 5 minutes till juices run clear. Remove from pan and set aside.
Turn burner to low and add the flour and butter to the skillet.
Add stock and heavy cream and continue to cook for a few minutes.
Add remaining ingredients and stir a few minutes longer until sauce thickens.
Add chicken back to skillet and use a spoon to coat with sauce. Sprinkle with fresh thyme.
