Kale Cranberry Feta Salad

Ready in 10 minutes, this easy kale salad is tossed in a homemade lemon vinaigrette.

Assemble ingredients. You can substitute cranberries for raisins and use pecans instead of walnuts.

Remove stalks from kale, rinse and chop.

Drizzle with olive oil and massage the kale for 30 seconds.

Add in lemon zest, cranberries, walnuts & feta cheese.

In a mason jar, combine dressing ingredients and shake until emulsified.

Pour dressing over the salad and toss well to coat.
