In large bowl, dissolve 1 tsp of sugar in water (temp 110°F). 

Sprinkle in yeast and let stand 10 minutes. Next, whisk in eggs & vegetable oil. Add in sugar & salt.

Coat a different mixing bowl lightly with olive oil. Place dough in bowl and turn dough to grease.

Cover with plastic wrap and let rise until doubled - about 1 to 1&1/2 hours.

Punch down the dough, knead 10 times, then divide into 12 equal portions.

Roll into ropes, then seal edges to form bagel. Cover with tea towel and rest 15 minutes.  Meanwhile, boil large pot of water with sugar. 

Boil bagels for one minutes on each side, then place on baking sheet.

Brush with egg wash, top with shredded cheese and bake in 400°F oven for 20 to 25 minutes.
