This satisfying one-pan dinner will be on the table in 40 minutes.
In a skillet, cook the ground beef, onion and garlic.
Next, add the enchilada sauce, tomatoes, black beans, ground cumin and chili powder.
Layer 4 of the corn tortillas in baking dish.
Spread half of the beef mixture over the tortillas, then cheddar and Monterey Jack cheese over the beef mixture.
Continue to layer, finishing with the cheese.
Bake 25 minutes. Garnish with fresh chopped cilantro.
