Potatoes eggs and fresh veggies in a creamy dressing.
Assemble ingredients and peel potatoes.
Boil the potatoes until fork-tender.
Hard boil the eggs and chop the vegetables.
Make the creamy dressing.
Chop the potatoes & eggs, then combine with dressing and veggies. Stir gently to combine.
Refrigerate for at least one hour, then enjoy!
