APPLE OATMEAL MUFFINS WITH MAPLE ICING
In a food processor, chop 1/2 cup of oatmeal until it is finely blended to flour consistency.
Combine dry ingredients in mixing bowl.
In a small mixing bowl, add eggs, melted butter and vanilla. Whisk until well combined.
Add wet ingredients to dry ingredients stirring just to combine. Add in chopped apples.
Spoon batter into 6 greased jumbo muffin tins.
Make the streusel topping and sprinkle it on the muffins.
Bake in 425°F oven for 5 minutes, then reduce to 350°F and bake for 20-25 minutes.
Make the maple icing and drizzle on muffins.
