What is it that makes us define a recipe as 'The Best'? Is this really THE Best Chocolate Chip Cookie Recipe?
There are millions of recipes for chocolate chip cookies if you search up 'chocolate chip cookie recipe' in google. Literally - one hundred and forty two million. Yep.
Some people like chewy cookies, some like crunchy, some hard, some soft.
For many of us it's the memory of something special - either a childhood memory, perhaps a first date or remembering the kid who sat beside you everyday on the school bus with chocolate chip cookies in their lunchbox.
For me, it's a few things......
I can remember coming home from school and my mom would have a batch of warm-from-the-oven chocolate chip cookies ready when we walked in the door. I'm sure she changed her recipe ten times over the years but my mom's were always 'the best'.
Now, I think 'the best chocolate chip cookies' are the ones that my husband Tim, and twin boys Troy & Austin love the most. (although my mom's are still amazing!)
I've played around with the ingredients many times and it makes a difference - or does it?
There's something comforting about warm cookies from the oven. I observe my boys, sitting at home trying to get through online school learning classes and not fully understanding what is happening in the world during these challenging times.
I bring a tray of The Best Chocolate Chip Cookies out of the oven and their eyes light up. Warm cookies and a glass of milk just makes the world seem a little better somehow.
Millions of people have started baking! Recipe searches on google are up and celebrities are posting videos of themselves in the kitchen cooking.
It's the comfort. The comfort of baking and having them made by someone who loves us.
So, that's my take on why THIS is the best recipe. Make them with love and they will love them.
How to make The Best Chocolate Chip Cookies
There are two very easy extra steps in this recipe.
1 - blended oatmeal. Using a food processor, blend the oatmeal until it is a fine powder.
2 - grate ½ cup of milk or dark chocolate. I use whatever is on sale. This time it was Jersey Milk chocolate bars and they were terrific.
3 - you can use milk chocolate chips or dark chocolate chips. One of my boys who shall remain nameless - well, we all know it's Austin - he likes to sneak into my baking supplies and eat chocolate chips. So, I use whatever I have on hand. Both are equally tasty in this recipe.
4 - you really have to crank up some good tunes when your making these cookies. It really adds to the whole experience 🙂 My favourite song for this recipe is Build Me Up Buttercup - cmon' you know you want to sing it now!
This recipe makes 36 medium sized cookies. YUMMY. They don't last long here.

Description
Soft and chewy on the inside and crunchy on the outside, these cookies are the ultimate in comfort baking.
Ingredients
1 cup butter, softened at room temperature
1 cup sugar
1 cup brown sugar
2 large eggs
1 tsp. pure vanilla extract
2 cups all purpose flour
2 cups blended oatmeal (see instructions below)
¼ tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 cups chocolate chips
½ cup grated chocolate (for example milk or dark chocolate chocolate bar)
1 and ½ cups chopped pecans (optional)
Instructions
1. In a food processor, blend oatmeal until it is a fine powder similar to flour.
2. Grate ½ cup milk or dark chocolate. Set aside.
3. Cream butter, sugar and brown sugar together on high speed of electric or stand mixer.
2. Blend in eggs, then vanilla.
3. In a separate bowl, mix together flour, blended oatmeal, salt, baking powder and baking soda.
4. Add flour mixture to butter mixture 1 cup at a time, blending at low speed.
5. Add chocolate chips, grated chocolate and nuts (if using).
6. Roll into 2 inch balls and press down gently in hands to flatten before placing on cookie sheet.
7. Bake in 375F oven for 10-12 minutes or until lightly browned around the edges. Cookies will be soft in the centre.
Makes 36 medium-sized cookies
Notes
Nuts are not included in the nutritional count as they are optional.
