    Easy Homemade Strawberry Shortcakes

    How to Make Strawberry Shortcake

    This recipe comes together in about 40 minutes and is an easy dessert that even a beginner baker would be able to tackle without any problem.

    The Strawberries

    Hull (cut the tops off) and rinse fresh strawberries. Sprinkle with 2 tsp. of white sugar and set in the fridge.

    The Biscuits

    Before you start the biscuits, and if you're using freshly made whipped cream, chill the bowl that you will be using to whip the cream. On a hot day in particular, the whipping cream will simply not perform the way that it should. A chilled bowl solves this problem.

    In a large mixing bowl, combine all purpose flour, granulated sugar, baking powder, baking soda and salt.

    Using a pastry blender, or by hand, cut in the cubed butter. If you are cutting the butter in by hand.

    The mixture will resemble fine crumbs.

    In a separate mixing bowl, combine sour cream and milk. Use a fork to add it to the flour mixture. You will end up with a soft, sticky dough.

    Gather the flour mixture into a ball, then knead it about 10 times or until it is smooth.

    Use a rolling pin (or you can press by hand) to roll the dough into a circle about one inch thick.

    Use a three inch circle cookie cutter to cut into circles. You will need to re-roll the scraps once and cut again.

    Place on baking sheet and brush the tops with milk. Bake in a 425°F oven for 15 to 20 minutes. Edges will be golden brown when the biscuits are done.

    Whipped Cream

    You can use canned whipped cream or dream whip or you can make your own using fresh whipped cream.

    For making the whipped cream homemade, beat one cup of whipping cream with 1 tablespoon of icing sugar and 1 teaspoon of vanilla. Beat until medium peaks form. When you dip a fork into it, you should see a form shape as you lift it out.

    To serve, slice the biscuit in half (best when warm) and top with prepared strawberries, followed by the whipped cream. Place the other half of the biscuit top over the whipped cream and berries, then repeat again with more berries and whipped cream on top.

    Description

    Fill these little shortcakes with berries as they come into season. Soft, yet crunchy, top these biscuits with sweetened whipped cream for a tasty treat. 


    Ingredients

    Shortcake

    2 cups all purpose flour

    2 ½ tablesppons granulated sugar

    1 tablespoon baking powder

    ½ teaspoon baking soda

    ¼ teaspoon salt

    ½ cup butter, cold and cut into ½ inch cubes

    ½ cup sour cream

    ¼ cup milk

    2 tablespoons milk (for glaze)

    Whipped Cream

    1 cup whipping cream

    1 teaspoon vanilla

    1 tablespoon icing sugar

    6 cups strawberries


    Instructions

    Hull (cut the tops off) and rinse fresh strawberries. Sprinkle with 2 tsp. of white sugar and set in the fridge. 

    Shortcake

    1. In a large mixing bowl, combine flour, sugar, baking powder, baking soda and salt.  

    2. Cut in cubed butter by hand or with pastry blender until fine crumbs. 

    3. In a small bowl, combine sour cream and milk.

    4. Add to flour mixture, pouring it in all at once. 

    5. Stir with a fork until you can form a soft, sticky ball. 

    6. With lightly floured hands, gather up the dough and set it onto a lightly floured surface. 

    7. With a rolling pin (or pat out by hand) roll dough into a circle about 1 inch thick. 

    8. Using 3-inch cookie cutter, cut into 6 rounds. You will have to re-roll the scraps once. 

    9. Place on baking sheet and brush tops with milk. 

    10. Bake in 425°F oven for 15 to 20 minutes until golden brown. 

    11. To serve, cut biscuit in half and spoon strawberries over the bottom half, followed by whipped cream. Top with other half  of the strawberries and spoon additional strawberries and whipped cream over top. 

    Whipped Cream

    In a mixing bowl, combine whipping cream, icing sugar and vanilla. Mix on medium-high speed of mixer until medium peaks form. (approx 2- 2 and ½ minutes)

     

     

    Notes

    Optional: Sprinkle with powdered icing sugar for garnish and sprig of mint leaf.
