olive oil - I like to use extra virgin olive oil or you can use any kind of olive oil that you have on hand.
fresh garlic, minced - if you don't have fresh garlic, you can use ½ tsp. of garlic flakes or garlic powder to one clove of garlic. For example, this recipe calls for 2 cloves of garlic, use 1 tsp. of the flakes or powder to replace the fresh garlic.
fresh rosemary or substitute with dried rosemary
freshly grated Parmesan cheese
Fresh ground pepper to taste
I love how easy this dish is to make and that it requires no fussing once it's in the oven. It took me less than ten minutes to prepare it. By the time the oven was preheated to 425°F, the dish was ready to bake!
In a large bowl, combine olive oil, fresh rosemary, minced garlic, salt and pepper. Stir to combine, then set aside.
Peel two large sweet potatoes. You can either peel with a knife, or use a peeler which makes the job a lot faster.
Slice the sweet potatoes into ¼" thick slices. Toss the sweet potatoes with the olive oil mixture.
Place sliced sweet potatoes into a small casserole dish. The dish in the photo is 4 x 11 inches but you could use your favourite baking dish, or any 8 cup casserole dish to layer the sweet potatoes.
Roast in 425°F oven uncovered for 30 to 40 minutes, or until tender when pierced with a sharp knife. Remove from oven and sprinkle with freshly grated Parmesan cheese.
