How to make Savory Roasted Sweet Potatoes with Parmesan
I love how easy this dish is to make and that it requires no fussing once it's in the oven. It took me less than ten minutes to prepare it. By the time the oven was preheated to 425F, the dish was ready to bake!
In a large bowl, combine olive oil, fresh rosemary, minced garlic, salt and pepper. Stir to combine.
Peel two large sweet potatoes. You can either peel with a knife, or use a peeler which makes the job a lot faster.
Slice the sweet potatoes into ¼" thick slices. Toss the sweet potatoes with the olive oil mixture.
Place sliced sweet potatoes into a small casserole dish. The dish in the photo is 4 x 11 inches but you could use any or any 8 cup casserole dish to layer the sweet potatoes.
Roast in 425F oven uncovered for 30 to 40 minutes or until tender when pierced with a sharp knife. Remove from oven and sprinkle with freshly grated Parmesan cheese.
