Peanut Butter Blossom Cookies

Description

A little crispy on the outside and perfectly chewy in the middle, these cookies are the classic treat and you will definitely love them on your holiday baking cookie tray!


Ingredients

1/2 cup granulated sugar

1/2 cup brown sugar

1/2 cup butter, softened

1/2 cup peanut butter

1 large egg

1 tsp. vanilla extract

1/4 tsp. salt

1/2 tsp. baking soda

1 and 3/4 cups all-purpose flour

Sugar for rolling the cookies into

1/4 cup sugar

Instructions

  1.  In a large mixing bowl, or bowl from a stand mixer, beat granulated sugar, brown sugar, softened butter and peanut butter at medium speed until light and fluffy. (about 1 minute)
  2.  Add egg and vanilla extract and beat until well combined. 
  3. In a small bowl, combine flour, baking soda and salt. 
  4.  Gradually add the flour mixture, beating on low speed until well combined.
  5. Wrap the dough and chill for 30 minutes. 
  6. Remove the foil from Hershey Kisses and place them on a plate in the refrigerator to chill while you're chilling the dough.  This will reduce the amount of melting when you press them into a warm cookie. 
  7. With clean hands,  shape dough into 1 and 1/2" balls, then roll each ball in the granulated sugar. 
  8.  Place 2" apart on prepared baking sheet. 
  9. Bake in 375°F oven for 8 to 10 minutes until a light golden brown.
  10. Remove the cookies from the oven and immediately press a chocolate kiss into the centre of each cookie.
  11. Move to a wire rack to cool.

Notes

  1. Note that the prep time does include the 30 minute chill time.  The dough is quick and easy to make and only takes about ten minutes!
  2. Storage instructions: Store cooled cookies in an a sealed airtight container for up to five days at room temperature. 
  3. Freezing instructions: Peanut Butter Blossom Cookies freeze well. Place in a single layer between sheets of parchment paper in a sealed freezer-safe container for up to three months.
