Maple-Glazed Banana Bread


Glazed with maple syrup, this banana bread is very moist and has a fine crumb. A quick and easy recipe to make wth beautiful results every time!


1/2 cup butter, softened

2/3 cup sugar

2 large eggs

1 tsp. vanilla

1 and 1/4 cups mashed ripe bananas

1/4 cup sour cream

2 cups all purpose flour

1/2 cup chop pecans (optional)

1 tsp. baking soda

1/4 tsp. salt

2 tbsp. maple syrup


1. Grease a 9x5 inch loaf pan.

2. In a small mixing bowl, stir together flour, chopped pecans, baking soda and salt. 

3. In a large mixing bowl, or stand mixer, beat together butter and sugar for one minute on medium speed.

4. Beat in eggs, 1 at a time at medium speed for 45 seconds after each one

5. Add in vanilla.

6. In a separate bowl, mash bananas then stir in sour cream.

7. To the sugar/butter mixture, stir in at low speed 1/3 of the flour mixture, 1/3 banana mixture and repeat until all have been added in.

8. Scrape into prepared loaf pan.

9. Bake in centre of 350F oven for 50 - 55 minutes or until a cake tester in the centre comes out clean. 

10. Let cool on rack for 5 minutes, then remove from pan and set on wire rack.

11. Use a wooden skewer or toothpick to poke holes all over the top.

12. Brush with 2 tbsp. of maple syrup.

Makes 1 loaf - 12 - 16 servings. 


Plain yogurt may be substituted for the sour cream.
