Homemade Marshmallow Fluff

Light and fluffy, this homemade marshmallow fluff is easy to make and is delicious sandwiched between the Hot Chocolate Cookies.


3 egg whites

1/2 tsp. cream of tartar

3/4 cup corn syrup

2/3 cup, plus 2 tbsp. granulated sugar

1/2 tsp. vanilla

1/3 cup water


1. In a large bowl, using whisk attachment from stand mixer or hand mixer beat egg whites and cream of tartar on high speed until foamy.

2. With the mixer running, gradually add in 2 tbsp. granulated sugar and beat until soft peaks form. Set aside.

3. In a small saucepan, combine water, corn syrup and 2/3 cup granulated sugar.

4. Cook over medium heat, stirring constantly until mixture reaches 248F on candy thermometer. The times will vary depending on your stovetop. It took me 12 minutes to reach 248F. It can take a few minutes longer. Keep a close eye on the temperature and remove from heat immediately when it reaches the correct temperature.

5. On medium speed of mixer, pour the hot mixture into the egg white in a steady stream then beat on high speed for 5 minutes.

6. Add vanilla and beat on high speed for one more minute.

Makes approximately 3 cups.
