Cranberry Banana Bread

Cranberry and banana combine together beautifully in this moist loaf that is quick and easy to make with great results.


1/4 cup butter, melted

1 cup granulated sugar

2 eggs

3 mashed very ripe bananas

1 cup chopped cranberries (fresh or frozen)

1 and 1/2 cups all purpose flour

1 and 1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1/2 tsp. cinnamon


  1. Preheat oven to 350F.
  2. Grease a 9x5x3-inch loaf pan and set aside.
  3. In a large mixing bowl, place butter, sugar and 1 egg.
  4. Beat until smooth.
  5. Add in second egg and beat until smooth.
  6. Add in cranberries and bananas and mix gently, just until combined.
  7. In a medium-sized mixing bowl, combine flour, baking powder, baking soda, salt and cinnamon. Mix well. 
  8. Add flour mixture all at once to wet ingredients.
  9. Stir only until combined. Be careful not to over mix.
  10. Scraped into greased loaf pan
  11. Bake in 350F oven for 55-60 minutes and test with cake tester to ensure it is done. 
  12. Let stand on wire rack for 10 minutes, then remove from pan and cool on rack. 
  13. Wait at least another 15 minutes before slicing.


  • Add in 1/2 cup of chopped walnuts for nice variation
