Chocolate Coconut Brownies


Chewy, chocolaty and delicious, these Chocolate Coconut Brownies have a chocolate layer that is topped with a coconut layer and are so easy to make and sure to satisfy your desire for a sweet treat!


2/3 cup all-purpose flour

1/2 tsp. baking powder

1/4 tsp. salt

1 cup sugar

2 eggs, well-beaten and at room temperature

1/3 cup butter, melted

1/3 cup coconut

2 ounces unsweetened chocolate, melted


  1. Combine all-purpose flour, baking powder and salt.
  2. In a separate bowl, gradually add sugar to the eggs, whisking until well-combined, then add in the melted butter.
  3. Add flour mixture to the egg mixture and mix well.
  4. Pour half of the batter into a small bowl and add the coconut; mix until combined.
  5. Add melted chocolate to the remaining batter and stir until combined.
  6. Spread chocolate batter in bottom of greased 8x8 inch square baking dish.
  7. Spread coconut batter on top of the chocolate batter.
  8. Bake in 350˚F oven for 30 to 35 minutes.
  9. Cool for 10 minutes on wire rack, then enjoy!


  • Melting chocolate in the microwave - You can melt the chocolate in the microwave for one minute (depending on the microwave). You have to watch it carefully, and as soon as it starts to melt, take it out and continue stirring. The warm chocolate will cause the rest of the chocolate to soften.
  • Melting chocolate on the stovetop - melt chocolate in a small saucepan over very low heat, stirring constantly and being careful not to scorch it. Once the chocolate starts to melt, turn the heat off and continue stirring. The warm, melted chocolate will melt the remaining pieces of chocolate.
  • Storage & Freezing InstructionsStore brownies in a covered container for up to three days. Freeze them in a freezer-safe container for up to three months.
