almond chocolate chip biscotti

Almond Chocolate Chip Biscotti - easy to make, simple ingredients.  If you’re a dunker then this cookie’s for you!


  • 1 - 3/4 cups flour
  • 2 tsp. baking powder
  • 3/4 cup whole almonds, unblanched
  • 2 eggs
  • 3/4 cup granulated sugar
  • 1/3 cup melted butter
  • 2 tsp. vanilla
  • 1/2 tsp. almond extract
  • 1 tsp grated orange rind
  • 1 egg white, lightly beaten


1.Preheat oven to 350°F.  Line cookie sheet with parchment paper.  Toast almonds for 5 to 7 minutes.  Set aside and let cool 5 minutes. 

2. In a large mixing bowl, combine flour, baking powder and toasted almonds. 

3. In a separate bowl, whisk together the eggs, sugar, vanilla and almond extracts, melted butter and grated orange rind.  

4. Stir wet ingredients into the flour mixture until a soft, sticky dough is formed.  Move to a lightly floured work surface and form into a ball.

5. Divide the dough in half, then roll and shape each piece into a 12-inch log. 

6. Place on baking sheet and brush the tops with egg white

7. Bake in 350° F oven for 20 minutes. Remove from oven and let cool for 5 minutes. 

8. Transfer logs to cutting board, one at a time.  Using a heavy, sharp chef's knife cut diagonally into 3/4-inch thick slices.

9. Next, stand the cookies upright on baking sheet (see photo above). Bake for another 20 minutes.  

10. Let cool on rack then enjoy!



Biscotti can be stored in an airtight container for up to two weeks.

Biscotti can be frozen for up to three months in a freezer-safe airtight container.

DOUBLE CHOCOLATE BISCOTTI VARIATION:  use 1-1/2 cups of flour and add 1/2 cup of cocoa powder to the flour mixture.  Dissolve 1 tbsp instant coffee grounds in the vanilla.  I like to use macadamia nuts in the chocolate version but you can use almonds or hazelnuts as well.  Add a 1/2 cup of chocolate chips. Omit almond extract. Only use the vanilla.
